Freeze-dried coffee and regular instant coffee both begin as brewed coffee, but they differ significantly in how they're processed — which directly affects flavor, aroma, and quality.

The water in freeze-dried coffee is removed in a cold vacuum chamber (-40°F) through sublimation, a process in which the ice turns directly into vapor without becoming liquid. This gently removes moisture while preserving the coffee’s natural oils, aromatics, and complex flavors. It takes about 24 hours to produce a batch of freeze-dried coffee.

In contrast, most traditional instant coffee is made through spray-drying into a chamber filled with hot air, often heated to 480 - 1,000°F. As the droplets fall, they dry quickly, leaving behind fine powder or uniform granules. This high-heat process is fast and efficient but destroys many of the volatile compounds that give coffee its depth and results in a flat, bitter, or burnt taste.

It's just one ingredient: freeze-dried coffee brewed from 100% Arabica beans. We don't use any fillers or preservatives in our coffee and each capsules is sealed individually with an aluminum foil to preserve freshness.

We give fluid oz recommendations on the box but you can adjust the water level to your personal taste! Feel free to leave room for milk by using less water. Any of our freeze-dried coffee can be made with cold or hot water.
